Potassium Benzoate, E212, CAS no.582-25-2, the potassium salt of Benzoic acid, a white, odorless, flaky, crystalline powder, soluble in water. Potassium Benzoate manufacturing process via chemical synthesis, toluene and potassium hydroxide as raw materials. It uses as food preservative that inhibits the growth of mold, yeast and some bacteria.
It works best in low-pH products, such as PH 4.5. Potassium Benzoate is used in acidic foods such as fruit juice (citric acid), sparkling drinks (carbonic acid), soft drinks (Phosphoric Acid), and pickles (vinegar). Potassium benzoate is also used in the whistle in many fireworks.
